Makes about 50 4oz servings
Combine the juice, sugar and whole eggs over low heat (don’t scald) to create a lemon curd.
Take off the heat.
Add the butter and white chocolate chips to the lemon curd, and stir in and allow to melt slowly.
Whip the eggs and sugar into a meringue. Set aside.
Whip the cream. Set aside.
Fold the meringue into the lemon mixture.
Fold in the whipped cream.
